Three-Ingredient Banana Pancakes ​(Gluten Free, Dairy Free, Sugar Free)

I've come across various versions of these pancakes across the web. This protein-rich recipe makes for an uber-satisfying way to start the day. Plus, being gluten, dairy and sugar free, you wouldn't know they are better for you than your old-school pancake recipe! Added vanilla and cinnamon will give a lovely flavour-kick.​​

Ingredients - Three-Ingredient Banana Pancakes

1 banana, mashed
Two eggs, beaten
1/2 cup buckwheat four (can be substituted for rolled oats) 

Yields: Approx 3-4 medium pancakes (serves one)

Prep time: 4 minutes | Cook time: Approx 2 minutes per pancake

Eat: Immediately

Combine all ingredients in a small bowl and whisk until smooth.

Grease a medium-sized fry pan  (I recommend using coconut oil)  and spoon batter into saucepan as per your desired pancake size.
Cook over medium heat so that bubbles form in pancake batter. Flip and cook on alternate side. Repeat until you have used all your batter.
Serve with runny-honey and your favourite fruit.

These pancakes are protein-rich and ingredibly filling - a healthy alternative to the traditional pancake conconction.
