Spiced Apple and Berry Breakfast Crumble (Gluten-Free, Dairy-Free, Vegan)

Dessert or breakfast, this cheeky little crumble will hit the spot.

Free from added sugar, full of fibre and with a hint of spice, I do hope you this variation of the home baking classic.

Moist Lemon, Yoghurt and Vanilla Cake (with vegan alternative)
Ingredients - Spiced Apple and Berry Breakfast Crumble (Gluten-Free, Dairy-Free, Vegan)
Fruit Layer
2 apples, peeled and sliced
Finely grated zest of 1 lemon
1/2 teaspoon ground ginger
1/2 cup frozen mixed berries of your choice

1 cup wholegrain oats
1/2 cup long-thread coconut
1/4 cup chopped walnuts or almonds
1 teaspoon ground cinnamon
​2 and 1/2 Tablespoons margarine
4 Tablespoons coconut oil
1 Tablespoon vanilla extract

Preheat your oven to 180°C. Grease and line a pudding dish or loaf tin with baking paper.

Layer your peeled / sliced apple across the bottom of the prepared dish.  On top of the apple, evenly sprinkle the ground ginger, followed by finely grated lemon zest.

Carefully spread your frozen berries on top of the apple.

Now prepare your crumble topping. Place oats, coconut, nuts and cinnamon in a large bowl.  Mix with a wooden spoon to combine.
Place margarine and coconut oil in a mug and give a quick 15 second blast in the microwave, to melt together. Add vanilla extract and stir through.

Pour this wet mixture into your oat mix. With your hands, mix to combine all ingredients and form your crumble topping. 
Sprinkle crumble  topping roughly over prepared fruit. I like to include some larger clumps of oat mixture in this step, to give a chewy texture to your topping.

Place crumble in the oven and cook for 25-30 minutes, or until golden brown and fruit has cooked through.
This crumble is lovely served with coconut yoghurt, either warm for dessert, or straight from the fridge for breakfast! 

It also freezes well. Simply defrost, before whizzing in the microwave or re-heating in the oven. Enjoy!
