One Pot Oaty Ginger Crunch (with Vegan and Gluten-Free options)

This filling (not to mention delicious) slice can be whipped up in one pot, so it is great for that last-minute picnic.

Another recipe from the family collection, the addition of nuts adds something a little different.

Flourless Dark Chocolate and Cherry Cake (Vegan, Gluten-Free)
Ingredients - One Pot Oaty Ginger Crunch (with Vegan and Gluten-Free options)
 
Slice:
225 grams butter or (vegan option) margarine 
3 Tablespoons golden syrup
3/4 cup brown sugar
1 cup desiccated coconut
1 cup plain flour, sifted or (gluten-free option) gluten free flour mix
2 teaspoons baking powder
2 teaspoons ground ginger
2 cups rolled oats (use gluten-free oats, if required)
3/4 chopped peanuts
 
Ginger Frosting:
70 grams butter OR (vegan option) margarine
2 Tablespoons golden syrup
1 Tablespoon ground ginger
1 and 3/4 cups icing sugar, sifted

Crystallized ginger, to decorate (optional)
Method
 
Preheat oven to 170°C. Prepare a medium-sized slice tin by greasing and lining with baking paper. 
 
In a heavy-based pot over a low heat, melt together butter, golden syrup and sugar.  Stir continuously until combined, then remove from heat.


Sift in flour, baking powder and ginger and mix with a wooden spoon. Fold through rolled oats and chopped nuts.
 
Transfer mixture into prepared slice tin and bake for 20 minutes, or until just golden.
 
Leave to cool in tin before icing.
 
To ice, you can re-use the pot that was used for the slice:
 
Rinse pot, then slowly melt together butter and golden syrup over a low heat. Remove from heat and add icing sugar and ginger, stirring until smooth. Once a thick, spreadable consitency (add more icing sugar during this step, if required), spread  over cooled slice. Decorate with crystallized ginger, if desired.
 
Leave to set in fridge before cutting into squares.
  

Yields: Approx. 12 ginger crunch squares

Prep time: 15 minutes | Cook time: 15  minutes

Eat: This slice can be kept in the fridge for up to a week. It also freezes well
