No-Bake Ginger and Pistachio Slice

An old recipe from the family collection, the saltiness of the pistachios combined with the spice of ginger in this slice creates one super-satisfying treat.

A New Zealand classic, this no-bake slice is also incredibly easy to make.

Spiced Berry Crumble Cake Recipe
Ingredients - No-Bake Ginger and Pistachio Slice

1 packet of plain biscuits (I use Super-Wine)
​125 grams butter, melted and cooled
1/2 cup sweetened condensed milk
1 cup desiccated coconut
1 cup raw, unsalted pistachio nuts
50 grams crystallized ginger,  finely chopped  
1 teaspoon ground ginger

Ginger Icing:

2 and 1/2 cups icing sugar, sifted
3 Tablespoons butter, softened
2 Tablespoons golden syrup
2 teaspoons ground ginger
2 Tablespoons milk

To decorate:
Additional chppped crystallized ginger and pistachio nuts, if desired

Line a medium-sized slice tin with baking paper.

Crush biscuits in a food processor until they resemble become fine crumbs. Transfer to a large bowl.

Add all remaining slice ingredients, mixing with a wooden spoon  until combined. Press firmly into your slice tin and set aside in the fridge while you prepare your icing:
In a clean, medium-sized bowl, use an electric mixer to beat all icing ingredients together until smooth and creamy. 

Spread over chilled slice. If desired, garnish with additional chopped pistachios and crystallized ginger.

Refridgerate until set (one to two hours).
Yields: Approx 15 slice wedges

Prep time: 15 minutes | Chill time: One hour

Eat: Keep this slice in the fridge for up to a week. It also freezes well.
