Donut Muffins

As a child I was obsessed with donuts, however couldn't quite master the art of deep-frying. Needless to say it was a delight to discover a 'Donut-Flavoured Muffins' recipe when flicking through my very favourite Muffin Bible. These fluffy, super-moist and uber delicious muffins are an adaption from this childhood recipe.

Spiced Berry Crumble Cake Recipe
Ingredients - Donut Muffins
 
Muffin Batter:
75g butter, softened
3/4 cup white sugar
3/4 cup vegetable oil (I use rice-bran)
2 eggs
1 Tablespoon golden syrup
1 and 1/2 teaspoons vanilla essence
2 and 1/2 cups plain flour
1 and 1/2 teaspoons baking powder
1 and 1/2 teaspoons ground nutmeg
3/4  teaspoon ground cinnamon
1/2 teaspoon salt
2 1/2 cups milk
1/4 teaspoon baking soda

 
Cinnamon-sugar donut topping:
4 Tablespoons melted butter
3/4 cup white sugar
3 teaspoons ground cinnamon


Method​

Preheat your oven to 190C. Lightly grease a large-capacity muffin pan, or if you have muffin liners, you can use these too.
 
In a large bowl, cream together  butter and sugar with an electric mixer until light and fluffy.

Add your oil, followed by eggs (one at a time), beating well after each addition to make sure the ingredients are fully combined.

Now add the golden syrup and vanilla essence, beating once more to combine all ingredients.
 
In a separate bowl, sift together the flour, baking powder, nutmeg and cinammon. Add salt.
 
In small saucepan, heat the milk on the stovetop until just about boiling. Remove from heat and add baking soda to froth.

 
To combine all ingredients, fold the milk mixture into the butter mix alternatively with the flour mixture (this will help avoid the mixture curdling). Fold all ingredients until just combined, making sure not to overmix the batter. Note, this batter is very running, and should resemble something similar to a pancake mix.
 
Carefully spoon your batter into prepared muffin pans, so they are three-quarters full. Bake for 15 to 20 minutes, or until muffins are delightfully golden and skewer comes out clean.
 
While still warm, brush your muffins with melted butter and sprinkle with sugar and cinnamon.


There you have it... a donut in a muffin! These puppies are best served warm, so if you aren't serving them straight away, they are delightful after 30 seconds in the microwave.

Yields: 10-15  medium sized muffins
