Banana, Oat and Blueberry Energy Cookies (Gluten Free,  Dairy Free, Vegan)

Gluten, dairy and refined sugar-free, these tasty morsels are energy-packed and full of yum.

The cookies have  dense texture and are suprisingly filling, making for an ideal on-the-go pick-me-up.

Ingredients - Banana, Oat and Blueberry Energy Cookies (Gluten Free,  Dairy Free, Vegan)
  
2 large ripe bananas, mashed
3 Tablespoons agave nectar (or honey for a non-vegan option)
4 Tablespoons smooth almond butter, melted
​1 and 1/2 teaspoon good-quality vanilla extract
1/4 teaspoon nutmeg
1 and 1/2 teaspoon ground cinnamon
1 and 3/4 cup rolled oats (gluten free oats can be used)
Pinch salt
1/2 cup fresh blueberries, washed

Yields: Approx 15 medium-sized cookies
Method

Preheat your oven to 170C. Grease and line oven tray with baking paper.


Combine all ingredients except blueberries in a large bowl, mixing well to combine.

Once you have a dense, well-combined mixture, fold through the blueberries, setting some aside to top each cookie before placing in the oven.

Place balls of the dough on a lined baking tray, allowing at least a 3cm gap between each ball. These cookies will not flatten so much, so I recommend flattening them with a butter knife.


For decoration, place a single blueberry on top of each cookie.

Bake for 13-15 minutes, or until just browned. Allow to cool before transferring to a wire rack to cool completely.
   
Prep time: 10 minutes | Cook time: 13-15 minutes minutes
Eat: Best eaten within 3-4 days. These cookies also freeze well.
Variation: Add chopped walnuts for more good-fats and added texture.
